A Brunchy Butternut Squash Frittata

IMG_4126 (2)Making meatless meals at home isn’t difficult when you have beautiful veggies to work with but coming up with new ideas can be a challenge.

  This Frittata was inspired by a butternut squash that has been staring me down in my kitchen for about a week now…..  I paired apples, onions and potatoes to make this sweet and savory dish.  Serves 6. Here’s the recipe:

1/2 butternut squash peeled, seeded and spiralized or grated

1/2 sweet onion spiralized or grated

1 potato peeled, spiralized or grated

1 medium apple peeled, spiralized or grated

3 eggs

1/2 cup of half and half

1/2 cup crumbled goat cheese

2 tablespoons of olive oil

1 pat of good butter

sea salt and ground pepper

1 teaspoon of fresh or dried thyme

1/2 teaspoon of cinnamon


Spiralize or grate squash, potato, onion and apple. Preheat broiler.  In an oven proof skillet, add olive oil and be careful to coat all the sides of the pan. Add grated veggies and fruit to the skillet, salt and pepper, a sprinkle cinnamon and sauté until softened but still Al dente.  In a bowl whisk cream, eggs, cheese, thyme, more salt and pepper until well combined.  Pour egg mixture over the sautéed veggies, cook until eggs have a chance to almost fully cook.  Dot the top with the butter.  Place the skillet in the oven to brown the top.  Keep a close eye on the broiler to avoid “over browning”.  Invert Frittata onto a serving plate and top with some vinaigrette tossed, fresh greens and serve.frittata slice
