My friend Linda sent me a recipe for Avocado Ranch Dressing. This recipe gave me an idea….since you can’t go wrong with avocado (brain food), I thought why not alter the recipe and use this dressing as a healthier replacement to mayonnaise.
This recipe called for a large amount of olive oil, another healthy fat, but I decided to eliminate most of the oil to lighten it up a bit. I wanted to add some dill for flavor and because I had to replace most of the oil with some other liquid… think, think, open the frig… hmmm…(did you see the lightbulb turn on over my head?!) Dill pickle juice! I borrowed a page from Southern cooks who use pickle juice as a condiment for cooked greens and veggies. Here’s my recipe:
1 large ripe avocado peeled
1 teaspoons fresh lemon juice
2 tablespoons olive oil
1/2 cup of 0% greek yogurt
½ teaspoon salt or to your taste
1 teaspoon sriracha or hot sauce of choice
2 tablespoons dill pickle juice
In a blender or nutri bullet blend all ingredients. Use like mayonnaise in your favorite salad recipes or on sandwiches. I even spread it on toast in the morning!
Covered in an airtight container, it lasted over three days without going brown. It really killed me not to eat it all for three days!! Ahhhh… the sacrifices…..
