I know, (sigh)…. another pumpkin drink recipe…. but with all the artificial flavored beverages out there, very few are made with real pumpkin. I made this thick and creamy smoothie to taste like a slice of pumpkin pie (without the guilt) and added a carrot to the mix. It’s a real bump up in your vitamin A intake…just in time for trick-or-treating in the dark!
Here’s what you’ll need:
1/2 cup of pumpkin, canned, frozen or cooked fresh
1 peeled carrot cut in blender friendly chunks
3/4 cup almond milk unsweetened
1 teaspoon maple syrup
1/2 teaspoon molasses with extra for drizzling on top
1/4 teaspoon cinnamon
1/4 teaspoon fresh ginger
3 ice cubes
In your blender or bullet, mix all ingredients until smooth. Pour into two glasses and drizzle with a little more molasses. Trust me, this is a pumpkin drink that will give you goose bumps….. the good ones! Getting your veggies in doesn’t have to be scary!
