Recently, Rachel, my friend and Managing Editor of EdibleIndy, asked me if I would contribute a Pescetarian dish for her magazine’s website, it was a challenge I couldn’t resist! 

So, off I went to the Saratoga Farmer’s Market for some inspiration and all fresh produce and visited Moby Rick’s Seafood for some beautiful cod. Here’s the end result.
